It's a Chinese influenced noodle dish. It usually has some vegetables and pork mixed in, and whatever flavors it and gives it the darker colour. There are actually several different kinds of pancit. I forgot which one this is, but it seems to be the most common. People usually squeeze kalamansi onto it.
